- 4-pork loin chops
- 1 c coconut flour
- 2 eggs
- 1 T Worcestershire Sauce
- ½ T smoked paprika
- 1 c ground walnuts
- Preheat oven to 325 degrees
- Grind walnuts up in food processor and set aside
- Put oil in skillet and heat on low to medium heat
- Have 3 bowls ready to prepare ingredients
- In 1st bowl, put coconut/other flour
- In 2nd bowl, combine eggs, Worcestershire, smoked paprika; mix
- In 3rd bowl, put ground walnuts
- Coat each pork chop in coconut flour, egg wash, walnuts
- Brown each side of covered pork chop in skillet
- Place in pan, put in oven and cook for 35-40 minutes or until meat thermometer registers done
One of our weekly dinners is Walnut encrusted pork chops. It has become a weekly favorite and even requested by my children, to my surprise. It sounds fancy and complicated, but it is actually pretty darn easy. If you are cooking dinner and need a little change, this is the perfect recipe to try out.
I start out by purchasing boneless pork loin chops. Pork loin is just a leaner cut of pork chops and I try to stick to leaner cuts for my family. If you want to save some money, you can also buy bone-in pork loin. I then purchase walnuts, usually in bulk. You can utilize any type of flour for the recipe. I have been experimenting with coconut flour, as a healthy alternative. You will then want to grab some smoked paprika. Yes, you read that right, smoked paprika. I had never used or heard of this before I tried out this recipe, but it provides a great smoky flavor. You can leave it out, if you desire. I like the taste it adds. Finally, grab eggs and Worcestershire sauce, if you don’t have them around already.
You will need to throw your walnuts into your food processor to grind them up into your fine walnut crust. You will need to have a skillet , with a little bit of oil, on low-medium heat, to give a slight browning of your crust before putting in the oven. I sometimes skip this step, but it helps set the crust better. Now, you will need three bowls, in order to prepare your pork loin chops to be ready for cooking. In the first bowl, put the coconut or other flour. The second bowl, you will combine the eggs, Worcestershire, and smoked paprika. Whisk the eggs, Worcestershire, and paprika together. In the third bowl, put your ground walnuts. Now you will coat your pork loin chops, starting with the coconut flour, then egg wash, and finally, the ground walnuts. Throw in the skillet to brown. After browning, put into a pan and into the oven. Cook at 325 for 35 to 40 minutes or until a meat thermometer reads the accurate temperature for pork.
While your pork loin chops are cooking, throw on some sides for your full meal. We went with a yummy wild rice blend and I try to always include a healthy vegetable or salad. After all is ready, put it all together and enjoy your new favorite family meal!
